Costa Rica:

Parchment coffee. Once the fleshy part of the coffee cherry is removed, a papery husk remains. Sometimes the coffee is roasted with the parchment on (and ground that way for brewing, too) for a fuller flavor. The colors seen here result from the drying affecting the varying thickness and residual sugars in the parchment.
